Chipotle Chile Salmon with Chopped Salad
SERVES 1 • READY IN 30 MINUTES OR LESS
Ingredients: SALAD • 1/2 cup coarsely chopped tomato•
1/2 cup each coarsely chopped green and yellow bell pepper
• 1/4 cup coarsely chopped radish
• 1/4 cup coarsely chopped red onion
•⅛ cup chopped cilantro •
1/2 tablespoon lime juice •
1 teaspoons olive oil •
1/4 teaspoon salt •
⅛ teaspoon coarsely ground black pepper SALMON
• 1/4 teaspoon chipotle chili powder
• 1/4 teaspoon dried oregano
• 1/4 teaspoon ground cumin
• ⅛ teaspoon salt
• 1 portion skinless salmon fillet
For the salad: Mix all the salad ingredients in a medium bowl; set aside. For the salmon: Mix the chili powder, oregano, cumin, and salt in a small bowl. Rub over both sides of the salmon. Spray a nonstick grill pan with nonstick spray and set over medium heat to preheat, about 2 minutes. Place the salmon in the grill pan and cook just until opaque in the center, about 5 minutes on each side. Serve with the salad

Air Fry Lunches
Take any of the Ideal Protein chips, place in a food processor and mix until fine crumbs, place in a wide bowl or on a plate.
Use cauliflower, pickles, peppers, or brussel sprouts etc
In a separate bowl mix egg whites and a little bit of water.
Dip your 2 cups of veggies into the egg mixture then transfer to chip plate and coat with the fine chip crumbs. Air fry at 400 for about 15 minutes or until completely crispy.
Eat alone or dip into an Ideal Protein dressing.
Use cauliflower, pickles, peppers, or brussel sprouts etc

Broccoli Soup Dip (great for lunch)
Blend fresh spinach, small garlic clove, & 1 tbsp of water. In a separate bowl pour broccoli mix and add just enough water so it isn't mushy but not quite a soup. Heat 1 minute then add the spinach mixture. stir thoroughly and cut up some bell peppers and start dipping.
Big Mac in a Bowl (one of my favs)
Cook and brown the leanest ground beef that you can find (90-93%) mix in with romaine or iceberg lettuce, 1/2c chopped/sliced pickles, 1/2c chopped tomatoes,1/4c white onion chopped finely, sea salt and pepper. Find FF and SF thousand island dressing and mix thoroughly. (if you cannot find dressing then mix 1c FF mayo, 1/4c relish, 1 1/2 tbsp yellow mustard, 2 tsp white vinegar, 1/2 tsp paprika, 1/4tsp garlic powder, 1/4 tsp onion powder and 3 tbsp FF&SF ketchup)
Delicious Salmon Dinner
Grill or bake your salmon place over cauliflower rice or broccoli rice (you can make your own, buy frozen, fresh, or even in the microwave packs found in the rice aisle (i get mine from shoprite). Mix together soy sauce, 1 tsp sesame oil, 1 tsp rice wine or sesame vinegar and mix into the rice. seaweed sheets can be used to grab pieces or you can mix in to the dish.
For my PHASE 3 peeps, omit the sesame oil and vinegar instead mix soy sauce in the rice then drizzle with kewpie mayo and 1/4 cup chopped avocado.

Lemon Chocolate Chunk Muffins
Preheat oven 350 and spray 4 standard muffin cups with cooking spray.
Crush lemon wafers by squeezing packet until wafers are crumbled (rough crumb with small chunks is fine)
Mix wafer crumbs, chocolate pancake mix, and 1 tsp baking powder.
In separate bowl whisk one egg, 3 tbsp water, and zest of 1/2 of a lemon.
Transfer wet mixture to dry and combine
Divide into the 4 muffin cups.
Bake 9-11 minutes remove and let completely cool.
2 muffins=1 unrestricted + .05 oz lean protein.
Crush lemon wafers by squeezing packet until wafers are crumbled (rough crumb with small chunks is fine)
Mix wafer crumbs, chocolate pancake mix, and 1 tsp baking powder.
In separate bowl whisk one egg, 3 tbsp water, and zest of 1/2 of a lemon.
Transfer wet mixture to dry and combine
Divide into the 4 muffin cups.

In separate bowl whisk 1/4 cup water, 1tbsp minced jalepeno, 1 egg
mix wet into dry and put into pan
bake 11-12 minutes
2 large muffins or 6 mini= 1 unrestricted + .5oz lean protein (egg)
